It is a natural process carried out by many micro organisms when sufficient oxygen is lacking.

It is essentialy the conversion of nitrate to nitrogen gas. It is also the key pathway of dissimilative nitrate reduction, which is the process in which nitrates are reduced from the soil, the former being highly toxic for living organisms.
